Copenhagen Food Collective (Cofoco) proudly unveils Olise, a new French-inspired bistro that expands the hospitality narrative begun by Coco Hotel — its sister property located just next door on Vesterbrogade. Together, the two destinations form a seamless experience where food, design, and comfort flow naturally across a shared courtyard in the heart of Vesterbro.
A Shared Courtyard, A Shared Vision
At the center of this union lies the courtyard, a green, sun-dappled sanctuary that connects Coco Hotel’s serene guest rooms and Coco Café with the intimate new dining room of Olise. Guests may step from breakfast coffee at the café to dinner at Olise in the evening — and then settle back into Coco for a nightcap – a gentle rhythm that embodies the effortless hospitality for which Cofoco is known.
More than a physical connection, the courtyard symbolizes Cofoco’s ethos: accessible luxury, urban calm, and the simple pleasure of slowing down in the middle of the city. It is a meeting place where locals, travelers, and creative minds converge over good food, wine, and conversation.
Olise: French Simplicity, Copenhagen Warmth
Olise offers a 65-seat dining room defined by timeless materials, soft light, and a convivial open kitchen. The menu at Olise is deliberately pared down to the bone, but you will find both classics and dishes with a modern twist – from pepper steak and baked cod with beurre blanc, to tuna with beetroot and Jerusalem artichokes with crab. The dessert menu offers interpretations of well-known favorites such as Peach Melba with crème fraiche sorbet and white chocolate with apple sorbet.
Guests can enjoy à la carte selections or indulge in a four- or five-course menu (DKK 445 / 545). The wine list, curated by Sigurd Kjeldgaard, balances beloved regions like Burgundy with hidden gems from new producers, ensuring every bottle is approachable and story-driven.
A Wine List with Ambition – and Fair Prices
Olise’s wine list is the result of several years of work selecting, buying and collecting wines from both classic and new wine regions – with a particular focus on Burgundy. The wine list is being expanded continuously, and the ambition is to reach 300–500 wines by the end of the year.
“Wine has generally become quite expensive, and our goal with the wine list is to create an exciting selection that is also fairly priced. We want the wines to be drunk – not just hidden away. That’s why we’re working on a pricing that hopefully makes the wine experience a natural part of a visit to Olise,” says wine manager Sigurd Kjeldgaard.
Coco Hotel: Rooms with Soul, a Café with a Heart
Next door, Coco Hotel offers 90 individually designed rooms that blend Parisian charm with Scandinavian simplicity — oak floors, curated art, and vintage lighting create a warm, lived-in feel. Each room reflects Cofoco’s understated aesthetic: tactile, soulful, and deeply personal.
At the heart of the hotel is Coco Café, a favorite among locals for its coffee, pastries, and casual daytime menu. Flowing into the courtyard shared with Olise, it becomes a gathering space that evolves with the day — from morning espressos and laptop work to evening wine and conversation.
